PRODUCTION PROCESS:
Sergio is a Veronese IGT red wine produced and created by its producer Sergio Castellani. After meticulous and careful manual harvesting, the grapes are placed in the dryer. Once the rest period is over, the latter are fermented at the same time and left to macerate; this process allows the extraction of aromas and the exaltation of a unique tasting complexity. Once the malolactic fermentation is finished, the refinement phase takes place in the rooms dedicated to maturation.

BOUQUET
Very clean and attractive. Black cherries, raspberries, blackberries and blackcurrants can be recognized very well. More hidden are the hints of dry undergrowth, tobacco, cigar, spicy, cinnamon and lighter ones, pepper and liquorice.
FLAVOR
The body is harmonious, slightly tannic but covered by softness: very persistent. Full, velvety, complex, it is very reminiscent of the scents of smell.
RECOMMENDED PAIRINGS
Recommended pairing with game or raw, baked, roasted, stewed or braised red meats; also excellent with aged cheeses (even spicy ones). It has no rivals when tasted in moments of relaxation in pleasant company or alone in front of a fireplace.
