PRODUCTION PROCESS:
Roller crushing with destemming and subsequent fermentation. Short maceration with frequent pumping over, followed by early separation of the pomace to keep the floral aromas unaltered and maintain softness; End of slow fermentation, followed by decanting for cleaning, stabilization and bottling.
