The Cuv\u00e9es are assembled together with the addition of selected yeast and raw cane sugar to begin the second fermentation called &#8220;second fermentation&#8221; in bottles strictly in a horizontal position. At the end of the cycle, the yeast colonies inside the bottles are transferred through the r\u00e9muage to the necks of the bottles ready for disgorgement.
